Sautéed Mushrooms and Onions

Ingredients:


Sautéed Mushrooms and Onions

2 (8 oz.) white mushrooms

1 tbsp. of avocado oil

2 whole yellow onions finely chopped

Salt and Pepper to taste



Cooking Steps


  1. Place about 1 tbsp. of avocado oil (or your favorite cooking oil) into a skillet and heat over medium-high heat. Once pan is hot, add the sliced mushrooms and season with a pinch of salt and pepper. Cook until the mushrooms are browned. Depending on your stove, you may need to lower the temperature to medium. Transfer to a plate for plating later.

  2. Using the same pan to you used to cook the mushrooms, add a drizzle of avocado oil and cook all the onions, except 1/4 cup that you will use to make the pico de gallo later. Make sure you season with salt and pepper. You want to cook until they are translucent and lightly browned, about 10 min. Transfer to the plate with the mushrooms and set aside for plating later.

Serve and enjoy.
