Parmesan Roasted Potatoes

These roasted potatoes will have you coming back again and again. It's a versatile dish that can be used from Breakfast to Dinner. Think about replacing store-bought tater tots with this amazingly simple dish. You will never again think the frozen potatoes will rival this dish! You can always kick up a notch and add your favorite hot sauce when plating.

Serves: 4 - 6

Prep Time: 10 min

Cook Time: 40 min


Ingredients:


12 small yellow potatoes

Drizzle of olive oil

2 Tbsp. Italian seasoning

1 ounce shredded parmesan cheese

A pinch of salt & pepper



Cooking Steps


  1. Pre-heat oven to 450 degrees. Line a baking sheet with aluminum foil and spray with non-stick cooking spray. Wash potatoes.

  2. Dice potatoes into 1/2 inch pieces and place on your baking sheet.

  3. Drizzle potatoes with olive oil, Italian seasoning, and salt & pepper. Toss to coat the potatoes well with the oil and spices.

  4. Bake for 30 minutes or until soft in the center. Remove from the oven and add 1 ounce of parmesan cheese.

  5. Return to over and broil on High for 5-10 minutes or until the cheese has melted and the potatoes are golden brown on top.

  6. Serve and enjoy.

This potato dish was so simple but so flavorful! Delicious combination... I will be adding this to our menu regularly!
