French Toast Two Ways

Fresh quality ingredients + a pinch of love will always result in a tasty dish.


French toast is my wife's favorite breakfast, so I'm always tweaking this recipe and finding new ways to make it for her. This time I had some corn bread left overs and decided to turn them into a different type of texture besides using brioche. As for the fruit topping, I used frozen fruit, so it wouldn't get mushy on me. But feel free to add or mix any fruits you have available. For those 21 of age and over, this pairs great with a Mimosa poured in a well chilled champagne flute.

Ingredients:


Custard

1 large whole egg

1 tbsp. brown sugar

1 oz. blood orange juice (regular orange juice can be substitute)

1 oz. white chocolate mocha

1/2 oz. of Grand Marnier

1/2 tsp of nutmeg

cinnamon to dust over

powder sugar to dust over

a pinch of salt


Fruit topping

1/2 cup of frozen mixed fruit

1/4 cup of sugar

1 tsp of lemon zest

1 tbsp. of lemon juice

1/4 cup of blood orange juice (regular orange juice can be substitute)

1/4 cup of water

Fruit Topping:

  1. Heat up a skillet and add the frozen frozen fruits and sugar. Once fruit is caramelized, add rest of the Fruit ingredients except for the water. Simmer till all ingredients start to thicken, lower temperature to simmer, add water, stir for about one minute. Turn temperature off, cover and set aside.

French Toast:

  • Lightly beat the egg in a bowl. Stirring in the the rest of the ingredients except for the cinnamon and powder sugar.

  • Heat up the skillet to medium-heat so that it's ready for the bread.

  • Start with the corn bread by gently, soaking up the liquid mixture on each side. Make sure to drip off any excess mixture before placing them in the pan.

  • Add butter to the pan and once melted, add the soaked corn bread. Dust each corn bread lightly with cinnamon. Cook until golden brown on each side, about 2-3 minutes.

  • Repeat the process for the rest of the soaked bread.

To Assemble

  1. Place of the corn bread and brioche French toast side by side. Sift powdered sugar, over and spoon over the fruit topping.

  2. Enjoy.
