Fluffy Pancakes

Homemade fluffy pancakes are a winner in any family household. These are supper fluffy, sweet and decadent. They can be topped off with your favorite fruit or jam.

Cook Time: 10 min


Ingredients:


Yolks

2 egg yolks

3 tbsp. flour

1/2 tsp. baking powder

2 tbsp. sugar

4 tbsp. milk


Meringue

4 large egg whites

3 tbsp. sugar

1/2 tsp cream of tartar



Cooking Steps


  1. Have two bowls ready. In one of the bowls, whisk the egg yolks with 2 tablespoon of sugar until frothy. Slowly start mixing in the milk a little at a time. Start to slowly add the flour and baking powder over the yolk mixture and whisk/mix well till everything is incorporated. Set aside for later.

  2. In the other bowl, whip/mix the egg whites with the cream of tartar until frothy and pale, adding in the sugar in a bit at a time until the whites are whipped into a glossy thick meringue that holds a peak. Be careful not to over whip.

  3. In the bowl with the egg yolk mixture, scoop about 2 large spoon full of the whipped egg whites and fold gently it into the bowl with the yolks until completely incorporated. Continue to do this until all of the mixed egg whites are incorporated, being careful not to over fold them in as it can deflate.

  4. Heat up a large non stick frying (with a lid) pan and lower temperature to medium-low. (you may need to test the temp setting depending on your stove and altitude) I suggest you try one before doing the rest. Over low heat, drizzle pan lightly with oil or you may decide to use a non-stick oil spray. Using an small scooper or measuring cup, scoop the batter onto the pan and cover to cook for 4-5 minutes.

  5. Remove the lid and add scoop more batter on top of each pancake slowly as to not let it drip over the sides. Cover and continue to cook for 4-5 more minutes. Lift the lid and use a spatula to gently release it easily – if the when you slightly lift the side and its not lightly brown, leave for another minute.

  6. Gently flip. Cover and cook for 5-6 minutes.

  7. Once the pancakes are golden, this is a sign that they are cooked through, gently remove and serve on a plate with sifted powdered sugar, favorite syrup, fruit or jam.

  8. Serve and enjoy.
