For one of those breakfast days you want to eat earthy flavors without any meat and without loosing that fantastic flavor profile that begins your day and leaves you thinking about it until lunch comes along. What will surprise you and everyone that has tried it, is the figs.

Ingredients:
2 eggs
1/4 cup of egg whites
2 sliced portobello mushrooms
1 sliced tomato
2 sliced dried figs
4 leaves of fresh basil
2 tbsp. of heavy cream
A pinch of salt & pepper
2 tbsp. of garlic herb butter
(see recipe under Sides Section)
1/4 of an avocado
1 tbsp. goat cheese
2 slices of favorite bread
Cooking Steps
Heat a nonstick or cast-iron skillet over medium-high heat. Place a tbsp. of the garlic herb butter and melt. Add the sliced mushrooms, figs, pinch of salt and pepper and sauté till mushrooms begin to brown. Once sautéed, set aside.
Beat the eggs, egg whites, heavy cream and pour into pan and lower heat to medium. Add a pinch of salt, pepper and sliced basil leaves (leave a few strips for garnish at the end). Cover and cook on low heat for about 3 minutes.
Meanwhile, spread about a tsp amount of the garlic herb butter in the middle of each of the sliced bread and toast.
After 3 minutes that the eggs have been cooking and texture is not runny, fold in half and half again, forming a pocket-like square. Remove skillet from the heat and keep the lid on.
To assemble: Take toast with the melted garlic herb butter and place the fluffy pocket square folded omelet + sliced tomatoes + sautéed mushroom and figs, then sprinkle some goat cheese. Add a few chunk sliced avocados. Drizzle with high-quality olive oil, salt and pepper to taste.
Serve and enjoy.
