Fresh quality ingredients + a pinch of love will always result in a tasty dish.
This homemade Vegan mayo was created and modified after trying several recipes out there. It's easy and tasty. (for those that haven't heard what aquafaba is, it is a product made from chickpeas normally used to replace eggs in recipes)

Prep Time: 10 min
Ingredients:
1 cup sunflower or canola oil
1/3 cup aquafaba
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
1 tsp of lemon zest
1 clove of garlic
1/4 tsp salt
Cooking Steps
Place all the ingredients except oil in blender. on low setting, start blending and slowly start to add half the oil.
Lift the cover of the blender to let some air inside the mix. Keep pulsing the blender while adding the rest of the oil until it is all incorporated and blended. Mixture should starts to emulsify and thicken.
If the mayo is still liquid after a couple of minutes, add more oil and blend for a few more minutes allowing some air to get inside the emulsion.
Place blended mix in an airtight container and refrigerate. Mayo should be good for seven days.
