Fresh quality ingredients + a pinch of love will always result in a tasty dish.
For when you need not only the protein but the flavor in breakfast. It's really easy and super tasty. Pairs well with a cup of your favorite espresso. For those 21 and over, this goes well with a spicy Bloody Mary or a Grapefruit Mimosa.

Cook Time: 15 min
Ingredients:
3 eggs
8 oz. sirloin
3 (quarter sliced) whole white mushrooms
1/2 sliced tomato
6 thick slices of bacon
2 pre-sliced mozzarella cheese
1/2 cup of fresh watercress
Handful of fresh spinach
1 sprig of rosemary
A pinch of salt & pepper
2 tbsp. of garlic herb butter
(see recipe under Sides Section)
3 good sized slices of French bread
Cooking Steps
Heat a nonstick or cast-iron skillet over high heat. Place a tbsp. of the Garlic Herb Butter. Season steak with sea salt and cracked black pepper on both sides and place on hot pan. Turn temperature down to medium-high and sear for 3 minutes on each side (for medium). Remove from pan and let it rest for 5 minutes before slicing.
On same pan, add the bacon and render until done, remove and place on a napkin-lined plate.
Using the same pan, add a sprig of rosemary and use the bacon drippings to sauté the quartered mushrooms. Remove move heat and set aside.
Wipe pan down and fry each egg to your preferred doneness (I've found sunny side up works excellent for this recipe).
Toast the sliced French bread.
To assemble:
Take toast and make sure to spread melted garlic herb butter throughout each slice. Top each slice as follows: a slice of tomato + mozzarella + watercress + a quarter of the mushrooms + sprinkle with salt and pepper.
Place sliced sirloin on one side of the plate and drizzle with the garlic herb butter.
Place the egg, bacon and quartered sautéed mushrooms across from it. (get creative on how it is placed on the plate, plating can be creative and fun).
Serve and enjoy.
