For one of those breakfast day you want to impress your friends, try this recipe. Its really easy and super tasty. for those 21 and over, this goes well with a spicy Bloody Mary.

Ingredients:
2 eggs
1 sliced white mushroom
1/2 sliced tomato
6 thin slices of Cantimpalo(chorizo)
4 strips of bacon
2 pre-sliced mozzarella
1 large sliced shallot
Handful of fresh spinach / arugula mix
A pinch of salt & pepper
2 tbsp. of garlic herb butter
(see recipe under Sides section)
1 tbsp. of Lizzy's sriracha mayo
(see recipe under Sides section)
2 good sized slices of French bread
Cooking Steps
Heat a nonstick or cast-iron skillet over medium-high heat. Place a tbsp. of the garlic herb butter and melt. Beat the eggs and pour into pan, add a pinch of salt and pepper. Cook until egg mixture is not runny. place 1 of sliced mozzarella. As for the rest of the mozzarella, leave for plating. Cover under low heat for about 5 minutes.
Meanwhile, place a tsp amount of the garlic herb butter in the middle of each of the sliced French bread and toast.
After 5 minutes the eggs have been cooking and texture is not runny, remove skillet from the heat and keep the lid on.
On a separate skillet, turn heat to medium, render the bacon, place aside.
Using the same pan,

add a small amount of the garlic herb butter, shallots and mushrooms, add a pinch of salt and pepper and stir till they are sautéed(color should be slightly brown, careful not to burn). remove from heat.
To assemble: Take toast and make sure to spread melted garlic herb butter throughout the slice. Place one of the slices on plate you want to serve in and stack as follows from the bottom up--> Spinach/arugula mix + omelet + sliced tomatoes + remaining slice of mozzarella + sautéed mushroom and shallots + cantimpalo + bacon + sriracha mayo and top with second slice of sliced French toast.
Serve and enjoy.
