An English Muffin Morning



Fresh quality ingredients + a pinch of love will always result in a tasty dish.


Take breakfast to another level by adding easy to find quality Spaniard ingredients like serrano ham and manchego cheese. If you dont want to take the time to poach the egg, you can just fry it to desired doneness.

Serves: 4

Prep Time: 10 min

Cooking Time: 25 min.


Ingredients:


1 English muffin (sliced and toasted)

1 whole egg

1 thinly sliced serrano ham

1/8 cup avocado spread

2 slices manchego cheese



Cooking Steps



Poach an egg by :

  • Fill a medium size pot with about 3/4 of the way with water. Bring the water to a boil and then reduce heat until it reaches a simmer. (Hint: look for the bubbles coming to the surface not to be rolling.)

  • Add vinegar to the water.

  • Crack one egg into a small cup , slowly lower it, allowing it to slide gently out the cup into the pot.

  • Cook the egg in simmering water for 4 minutes for a runny center consistency, or about 7 minutes for a soft but firm yolk. Scoop the poached egg out gently with a slotted spoon.

Assemble:

  1. Using one of the toasted muffin slices, spread avocado spread, place poached egg, serrano slice and manchego cheese slices on top, place other toasted muffin on and top. place on you serving dish.

  2. Serve with the wedges and enjoy!
